Now Urban Concept presents Jackrabbit, an understated luxury establishment that prides itself on stepping away from the manufactured-restaurant scene and instead relaying an artisan's approach that teases and taunts the five senses from start to finish, making every meal superlative.
Restaurateurs Andrew Santoso and Dany Setiawan, whose individual resumes include Cork & Screw, Loewy, X2 and Blue Note take pride in having a finger on the pulse of Jakarta, but believe the city has yet to see anything like Jackrabbit, which marries globally inspired, contemporary American cuisine and sophisticated libations to culminate in a world-class dining experience.
"In my twelve years in the industry I've never been so excited and scared at the same time," says Andrew. "Pushing the boundaries really plays games with your mind. But I've put everything I have into this and seen to every detail. I'm confident we're taking Jakarta to the next level."
Tattoo-sleeved executive chef Juna Rorimpandey, whose decade-long resume includes a stint at The French Laundry in Napa Valley, has created a menu rooted in French discipline and Japanese flair, carefully presented with powerful restraint. Juna pours everything he knows into an unforgettable array of impeccably crafted and innovative dishes. His love for fresh-from-the-farm ingredients- be they locally grown or available only on the other sides of the world- combined with his fascination for molecular gastronomy, has led to the creation of a menu the likes of which Jakarta has never seen.
The multifaceted yet approachable libations served in Jackrabbit are the brainchild of whiz mixologist Carson Quinn, who has been behind the bar at world famous haunts like Roka Akor, the Ritz-Carlton and Merc Bar in the United States. Forget everything you think you know about cocktails and get ready to experience drinks like the cigar-smoked blood orange old fashioned, born of orange peel infused brandy and gomme syrup and the Bali 75, which blends Balinese pomello, infused gin with lemon and champagne.
Jackrabbit's ambience, created by Urban Concept's team of designers featuring Krish Suharnoko, a graduate of the Harvard School of Design, presents a darkly-sophisticated interior, born of high-ceilings, unfinished concrete and smooth wood furnishings, which begins at the doorstep and is centered around Asia's first floating mezzanine -an uplifted private 20-seat dining area secured by sturdy steel casts connected to the high-beamed ceiling overlooking the dining area.
For all its sleek elegance, there is something comforting about Jackrabbit, which is a distinct departure from the commendable but noticeably staid Jakarta restaurant scene. The dulcet sounds of a carefully crafted music selection empty themselves throughout Jackrabbit, while the smell of sauteed garlic, rosemary and warm bread creep out from the open kitchen throughout the day and into the night.
The sweeping dining room in itself is the paradigm of cool, boasting floor-to-ceiling windows, with a two-storey back bar featuring a custom-built library ladder. Bare dark wooden dining tables, soft banquettes and an intricate lighting scheme create a dark nostalgic feel, while innovative classic-cut chairs give customers a contemporary take on the class and elegance of the1930s. The outdoor water garden seating is coveted when the weather is just right.
